Quinoa & Zucchini w/Mushrooms (Gluten Free!)

I had some leftover zucchini and some mushrooms that had to be used, so I was originally going to just sautee them together, throw on some sundried tomatoes, and call it a day….but I got to thinking. I have a bag of quinoa from when I was trying to incorporate some food that’s actually good for me into my diet. Sauteed Zucchini with Sundried Tomatoes & Garlic (Gluten Free!)

This is one of my favorite veggie dishes. I love zucchini, it’s such a versatile vegetable. It has a light flavor that absorbs the flavors of whatever you cook it with. I’m on a sundried tomato kick. I never liked them until I was dating the Mister, and during a dinner at Carrabba’s one night, he turned me on to both Caesar salad and sundried tomatoes.
